I have a degree in Culinary Arts from the Joliet Junior College College of Culinary Arts. I haven't "worked" in the food business for many years though I am an avid gourmet chef and lover of wine. People always ask what my specialty is and I always have a hard time answering that question. I enjoy trying a dish from a restaurant and the first duplicating it and then making it my own.

About Me:
I’ve got the greatest job in the world. I make successful business people even more successful. In particular I assist successful restaurant owners.
I show them how to make their money work for them in more than one way, usually multiple ways over and over and over again with multiple rates of return. The bonus is that they save taxes along the way, lower their risk and provide more protection against the things that can eat away at their money.

Now that sounds good to me! Not afraid of the cold weather ay? Cool for you.. actually I think Sunday is going to be pretty warm in Indy. If you make your own spice rub you should share it with us at TFJ. If it's not too late, take a picture of the process, you know - putting the rub on... 2 hours in... then the finished product. We wanna see. :-)

So this weekend i am going to fire up the smoker and cook some pork spareribs, about 8 hours ought to do it. Peel the membrane off of the back and coat evenly with spice rub then smoke for 8 hours at 185 degrees. It just melts in your mouth.

Hey Jim! Welcome and thanks for taking part in our Food Junkie Community. Hopefully we can get some folks interested and create a really cool platform for interaction with other foodies. Great profile... please share some of your culinary wisdom as a forum entry or start blogging about what you're cooking and eating at restaurants. I always knew you were an interesting fella.
